Poached Octopus
Buy two fresh octopusses, each weighing about half a kilo. Wash and put them in a pan without water, and with garlic, parsley, oil, some sliced onion, a couple of slices of soft tomato, pepper and hot chilli. Cook the octopus for 2 hours on a low flame with the lid on. When done, cut into pieces and serve with its sauce.
Poor Fool

Stuffed Cuttlefish or Squid

Clean courageously half a kilo of cuttlefish, removing skin, bone, eyes, entrails including the ink sac, which could be an aphrodisiac if fired. I suggest to do this operation under running water.

Prepare the filling as follows: Blend 2 beaten eggs with a handful of grated pecorino chess, 2 handfuls of soft crumbled bread, chopped parsley and garlic, salt and pepper. Stuff each cuttlefish with the mixture and seal the aperture by sewing it with white thread, then place them in a pan. Pour abundant olive oil over, and leave to cook with the lid on for about half an hour. Once they are cooked, don't forget to remove the thread before arranging the fish on a serving dish.

Try this meal with a good light red wine.
